No trip through a Taiwan night market feels complete without a sizzling oyster omelette, its lacy sweet-potato-starch batter pooling around plump oysters and a fistful of greens. It's the smell of Shilin and Liuhe after dark — pure xiao chi (small-eats) soul food.
The story behind it
蚵仔煎 (ô-á-tsian in Taiwanese Hokkien) belongs to the Minnan-rooted street-food culture carried across the strait, and similar oyster pancakes appear all along China's southern Fujian coast. The dish hinges on small, briny oysters from western-coast farms like Dongshi and Wang-gong, bound by sweet-potato or tapioca starch rather than wheat flour, which gives the signature stretchy, translucent body. A pink-orange sweet-and-savory sauce — built from miso or fermented bean paste, ketchup, sugar and starch — is ladled over the top, a flavor profile distinctly Taiwanese. It regularly tops local polls of the island's most-loved night-market snacks.
Ingredients
- 10-12 small fresh oysters (about 100 g), rinsed and drained
- 1 large egg
- 1 small handle of leafy greens (chrysanthemum greens / tong ho, or bok choy), roughly chopped
- 3 tbsp sweet-potato starch (or tapioca starch)
- 6 tbsp water, plus more to loosen
- 1 tbsp neutral oil for frying
- For the sauce: 1 tbsp ketchup, 2 tsp miso or sweet bean paste, 1 tsp sugar, 1 tsp soy sauce, 1/2 tsp starch, 4 tbsp water
Steps
- Make the sauce: whisk all sauce ingredients in a small pot, simmer gently until glossy and lightly thickened, then set aside.
- Whisk the sweet-potato starch with the water until smooth and lump-free — it should be a thin, milky batter.
- Heat the oil in a non-stick pan over medium-high. Add the oysters and let them sizzle for about 30 seconds.
- Pour the starch batter over the oysters and swirl into a round pancake; scatter the chopped greens on top as the edges turn translucent and lacy.
- Crack the egg over the pancake, break the yolk and spread it across the surface, and fry until the bottom is set and crisp.
- Flip to lightly brown the egg side, slide onto a plate, and ladle the warm sweet-savory sauce generously over the top.
